As for any event-based fundraiser, location is job number one. You've got a few options depending on your organization, facilities, and access.

• Partner with an area restaurant; plan a buffet-style or limited menu options and sell tickets to the event at a set price (you want to avoid a varied menu with varied prices).
• Use your own cafeteria and dining facility if large enough. (This is a great fundraiser for school groups and daycares).
• Rent a public function hall with kitchen facilities.

Next, you'll need to see to food requirements. If you chose to host your Easter Bunny Breakfast at a restaurant, your job is done here after choosing the menu. If you'll be handling food on your own,

• Plan a menu that is easily prepared and will serve many cheaply – pancakes, muffins, sausages, bacon, all are ideal.
• If you find food prep unmanageable, hire a caterer to prepare the breakfast.
• Shop at bulk warehouses to get good prices on bulk grocery items
• Ask area grocery stores for in-kind donations of pancake mixes, syrup, paper products, plastic cutlery, meat, etc.

It is very important that you planning on enough volunteers to pull off all that cooking and serving. Start organizing volunteers early on, and remind them of their commitment a week or so before the event. Make sure you have good, skilled cooks for the cooking – and enough of them!

It's also a big deal to think about all the big and little supplies you will need such as

• Pans
• Griddles
• Electric frying pans/griddles (which easily increase your cooking surface so that you can get the food out on time!)
• Spatulas

And of course – one of the most important things of all – is to book the bunny! Arrange for someone to take pictures and either sell them separately or include them in the price of the breakfast ticket. Here, a digital camera or Polaroid set-up is handy. As an alternative, you may choose to simply bring the bunny in and let families snap their own pictures for no charge.

An Easter Bunny Breakfast is a fun and profitable Easter fundraiser, but it does take a lot of work and commitment. The returns, though, are great, and you and all of your participants will enjoy not only great profits, but great satisfaction in seeing how much the children enjoy dining out with the Easter Bunny.
